Handsome Carver’s Chocolate and Coffee Frollini

INGREDIENTS

½ cup dark chocolate
¼ jar of Handsome Carver’s Chocolate and Coffee Peanut Spread
¼ cup granulated sugar
1 egg, beaten
1 tbsp vanilla extract
1 cup all-purpose flour
2 tbsp cocoa powder
1 tbsp baking powder
Powdered sugar

DIRECTIONS

Pre-heat oven to 320°F.

Place chocolate in a double boiler and heat until melted, then add the Chocolate and Coffee Peanut Spread and blend until hot and smooth. While stirring continuously, aAdd the sugar, beaten egg and vanilla extract.

In a separate bowl sift together the flour, cocoa powder and baking powder. Gently fold the dry mixture into the chocolate mixture. The mixture will be a dough like.

Allow the dough to cool sufficiently for handling. Shape the dough into 3” balls; roll in powdered sugar and place the balls on a cookie sheet or shallow oven tray about 3” apart. Bake for 20 minutes.

Handsome Carver’s Chocolate & Coffee Truffle Balls

INGREDIENTS

6 graham crackers (unflavored)
3 tbsp granulated sugar
⅓ stick butter
4 oz dark chocolate
5 tbsp Handsome Carver’s Chocolate & Coffee Peanut Spread
½ cup warm milk
Powdered cocoa

DIRECTIONS

Crumble the graham crackers to a fine consistency then add the sugar and mix evenly. Set aside.

Place butter and dark chocolate in a double boiler and heat until melted, then add the Handsome Carver Chocolate & Coffee Peanut Spread and blend until hot and smooth.

Add the dry graham cracker mix to the chocolate mixture then slowly pour in the warm milk. The mixture will be a thick dough.

Place the dough in the refrigerator for 30 minutes to cool down.

Remove from refrigerator, and shape dough into 1.5” diameter truffle balls. Rolls the truffle balls in the cocoa powder.

Place the truffle balls on a serving dish and chill in refrigerator until ready to serve; serve cold.

Spring Rolls with Handsome Carver’s Chipotle Peanut Butter Dipping Sauce

Makes 8 rolls / 4 servings

INGREDIENTS

The Rolls

2 oz bean thread noodles (or cellophane noodles)
Juice of 1 lime
1 block tofu, pressed and sliced into about 16 strips. Raw or cooked to your preference (fried, grilled, pan-seared, etc.)
1 carrot, peeled and cut into matchsticks
1 cucumber, peeled and cut into matchsticks
1 jalapeno pepper (or pepper of choice), slivered
cup rice vinegar
1 tbsp sugar
1 pinch salt
8 rice paper wrappers
Sprigs of fresh herbs: mint, cilantro, and/or basil leaves
1 large handful fresh crisp greens
1 large handful sprouts or shoots

The Dipping Sauce

cup Handsome Carver’s Chipotle Peanut Butter
1 tbsp tamari (a gluten-free soy sauce substitute)
1 tbsp sambal chili paste (or more/less to taste)
1 tbsp maple syrup
Lime juice to taste (or 1 tbsp reserved vinegar mix from above)
Water, as needed to thin out a bit

DIRECTIONS

  1. Soak bean thread noodles in hot water for 10 minutes until softened, then drain and rinse under cold water, drain again, and place in bowl and toss with juice of 1 lime.
  2. Combine the carrots, cucumber, and pepper in a large bowl and add the vinegar, sugar, and salt. Let rest for 5-10 minutes then drain the veggies, reserving some of the vinegar mix if you want to use it in the dipping sauce.
  3. Whisk or blend all sauce ingredients.  If needed, thin with some water for desired consistency.

ASSEMBLING

General note: Work one roll at a time, start-to-finish.  If you have the work space, you may find it helpful to divide up the filling into 8 little piles before you start assembling, but if not, eyeballing it is fine – spring rolls can be an imperfect creation.

 1. Fill a shallow pan or curved plate with very-warm water (not hot enough to burn yourself though), soak a rice paper wrapper for 30 seconds until soft, remove the wrapper out gently and let the excess water drip off, then lay flat on a clean work surface such as a cutting board.

2. Arrange several sprigs of the fresh herbs in a line about 1/3 from the bottom of the wrapper.  If you are interested in a pretty presentation keep in mind that the sprigs will be visible through the translucent rice wrapper when all finished, so you could place them intentionally to create visual interest in the roll.

3. Assemble the remaining ingredients in a small pile on top of the herbs: 1/8 of the crispy greens, 2 pieces of tofu, 1/8 of the sprouts, 1/8 of the veggie mixture, and 1/8 of the bean thread noodles.

4. Roll from the bottom up, folding in the sides as you roll.

5. Repeat until all 8 rolls are assembled. Place on a serving dish either whole or sliced in half, alongside the PB dipping sauce.

8 oz canned garbanzo beans
2 tbsp Handsome Carver’s Chipotle Peanut Butter
Salt to taste
1 egg yolk
1 tbsp all purpose flour
3 tbsp water
2 tsp olive oil

DIRECTIONS

Mix all ingredients together with mixer of choice. Using two spoons, shape the batter into small balls, and leave them to rest in the fridge for 30 min. Heat up the olive oil in a frying pan, and lightly fry the garbanzo beans balls until golden brown.

Serve warm.

Easy and gluten-free savory individual muffins

INGREDIENTS

Butter
3 carrots
2 celery stalks
1 red bell pepper
½ onion
4 eggs
1 ½ cups grated parmesan cheese
1 cup cream
1/2 jar Handsome Carver’s Chipotle Peanut Butter
Salt and pepper to taste

DIRECTIONS

Pre-heat oven to 350 degrees.
Lightly butter a 12-cup muffin pan or line muffin cups with liner papers.  Finely chop all vegetables and combine into a large bowl.  Spoon 1 tablespoon of the vegetable mix to each muffin cup.

Beat the 4 eggs in a bowl then add the grated parmesan cheese, cream and peanut butter and mix well.  Add salt and pepper to taste.  Pour the mixture over the vegetables, not quite to the top of the muffin cup rims (about 1/8 inch below the top).

Bake at 350 degrees for 20 minutes or until souffles are golden brown.  Serve warm.

Handsome Carver’s Soba Peanut Noodles with Greens

SAUCE

2 tbsp Handsome Carver’s Coconut Peanut Spread
1½ tbsp tamari (or soy sauce)
1 tbsp mirin (or sweet cooking rice wine)
2 cloves garlic, minced or grated
1 tbsp ginger, minced or grated
½ tbsp agave (or maple syrup)
1 tsp toasted sesame oil
Zest of 1 lime
1 tbsp sriracha to taste (or other hot sauce)

BOWL

4 oz (dry) 100% buckwheat soba noodles
½ tsp toasted sesame oil
1 tbsp sunflower cooking oil (or other neutral-flavored high-heat cooking oil)
1 lb leafy cooking greens of your choice (kale, chard, bok choy or spinach) washed and patted dry
Juice of 1 lime

1 sheet toasted nori (or edible seaweed), slivered
Salt and pepper (to taste)
1 cup edamame beans shelled and thawed, if frozen

GARNISH

Mix and match or all of the below:

4 scallions (green parts only) chopped
1 handful fresh herbs such as basil, cilantro, or mint, -washed, patted dry and chopped finely
1 thinly sliced or slivered radish
1 handful of crushed or chopped peanuts

1 handful of crushed or chopped wasabi peas

Lime wedges
Extra sriracha

Black sesame seeds

INSTRUCTIONS

1. In a small bowl, whisk together all the sauce ingredients and set aside.  Add a little water if the finished sauce consistency is too thick to pour.

2. Bring a pot of water to a boil and cook the soba noodles according to the package directions.  Drain then run under cold water to stop the cooking process.  Toss the noodles with ½ tsp toasted sesame oil to keep the noodles from sticking.

3. In a large skillet or wok, heat 1 tbsp cooking oil over medium-high to high-heat, then quickly cook the greens until just wilted and tender, 1 to 2 minutes, stirring and turning frequently.  Salt and pepper the greens to taste.  When done cooking, toss the greens with the lime juice and stir in the slivered nori.

4. Assemble the bowl with noodles, cooked greens, and thawed edamame, then dress with peanut sauce.  Top with any or all of the garnishes, to taste.

Yield: 2 servings

INGREDIENTS

1 large onion
3 cloves garlic
1 large sweet potato
3 large carrots
1 large red pepper
3 tbsp vegetable oil
3 tbsp Thai red curry paste
½ jar Handsome Carver’s Natural Style Peanut Butter (or more depending on taste)
1 can coconut milk (14 oz)
32 oz vegetable broth
1 cup rice
Salt and pepper to taste

Optional:
Garnish of chopped peanuts, chopped cilantro or chives

Serves 4

DIRECTIONS

Peel and roughly cut onion and garlic. Put onion and garlic into a food processor and chop until almost mushy. Set aside. Cut up sweet potato, carrot and red pepper into bite size pieces. Cook sweet potato and carrot on medium heat in a deep fry pan in vegetable oil for about 5 minutes. Add the red pepper, onion and garlic and cook until sweet potato, carrot and red pepper are tender. Mix in the curry paste. Stir in Handsome Carver’s Natural Style Peanut Butter, followed by coconut milk and vegetable broth and blend. Gently simmer for about 20 minutes.

Cook the rice while the curry is simmering.

To serve, put a scoop of rice into a serving bowl and ladle in the curry, then garnish with chopped peanuts, cilantro or chives.

Handsome Carver’s Cinnamon & Honey Peanut Spread Ricotta Pie

CRUST

1 stick + 6 tablespoons butter, room temperature
2/3 cup granulated sugar
1/3 cup + 1 tablespoon powdered sugar
Pinch of salt
1 egg + 1 egg yolk
Zest of 1 orange (optional)
2 ¾ cups all-purpose flour
Milk

In a bowl, stir butter, granulated sugar, powdered sugar, and salt together until blended.  Add egg and orange zest (optional) and mix until smooth.  Add flour a cup at a time, then add milk, if needed, by teaspoons for a consistency of pie dough.

Form the dough in a ball, wrap in plastic wrap and refrigerate for at least half hour.  Then place dough in the center of either a spring form pan or pie tin.  Spread the dough out to cover the bottom and up the wall of the pan or tin (about 1”).  Punch holes in dough to avoid unwanted rising and cracking while in the oven.

Set aside the prepared pan.

FILLING

15 oz ricotta cheese
½ cup sugar
1 full egg and 2 egg yolks
1 cup chopped dark chocolate or chocolate chips
⅓ jar Handsome Carver’s Cinnamon & Honey Peanut Spread
½ tsp salt

In a separate bowl mix ricotta, sugar, eggs, Handsome Carver’s Cinnamon & Honey Peanut Spread and salt. When smooth, add the chocolate and mix all together.

Preheat the oven at 350°F.

Pour entire filling mixture onto dough, and use the rest of the dough to decorate the top as you like. Bake for ∿45min (until the dough has browned).

Mix sugar, salt and eggs until smooth. Add bread crumbs and baking powder, previously mixed together. Pour in Handsome Carver’s Vanilla Almond Butter and the cream. Mix until homogeneous.

Preheat the oven at 365°F.

Chop the chocolate in chunks of fair size, then add to mixture.
