Spring Rolls with Handsome Carver’s Chipotle Peanut Butter Dipping Sauce

By | Chipotle Peanut Butter, Recipes | No Comments

Makes 8 rolls / 4 servings

The Rolls

2 oz bean thread noodles (or cellophane noodles)
Juice of 1 lime
1 block tofu, pressed and sliced into about 16 strips. Raw or cooked to your preference (fried, grilled, pan-seared, etc.)
1 carrot, peeled and cut into matchsticks
1 cucumber, peeled and cut into matchsticks
1 jalapeno pepper (or pepper of choice), slivered
cup rice vinegar
1 tbsp sugar
1 pinch salt
8 rice paper wrappers
Sprigs of fresh herbs: mint, cilantro, and/or basil leaves
1 large handful fresh crisp greens
1 large handful sprouts or shoots

The Dipping Sauce

cup Handsome Carver’s Chipotle Peanut Butter
1 tbsp tamari (a gluten-free soy sauce substitute)
1 tbsp sambal chili paste (or more/less to taste)
1 tbsp maple syrup
Lime juice to taste (or 1 tbsp reserved vinegar mix from above)
Water, as needed to thin out a bit

  1. Soak bean thread noodles in hot water for 10 minutes until softened, then drain and rinse under cold water, drain again, and place in bowl and toss with juice of 1 lime.
  2. Combine the carrots, cucumber, and pepper in a large bowl and add the vinegar, sugar, and salt. Let rest for 5-10 minutes then drain the veggies, reserving some of the vinegar mix if you want to use it in the dipping sauce.
  3. Whisk or blend all sauce ingredients.  If needed, thin with some water for desired consistency.

General note: Work one roll at a time, start-to-finish.  If you have the work space, you may find it helpful to divide up the filling into 8 little piles before you start assembling, but if not, eyeballing it is fine – spring rolls can be an imperfect creation.

 1. Fill a shallow pan or curved plate with very-warm water (not hot enough to burn yourself though), soak a rice paper wrapper for 30 seconds until soft, remove the wrapper out gently and let the excess water drip off, then lay flat on a clean work surface such as a cutting board.

2. Arrange several sprigs of the fresh herbs in a line about 1/3 from the bottom of the wrapper.  If you are interested in a pretty presentation keep in mind that the sprigs will be visible through the translucent rice wrapper when all finished, so you could place them intentionally to create visual interest in the roll.

3. Assemble the remaining ingredients in a small pile on top of the herbs: 1/8 of the crispy greens, 2 pieces of tofu, 1/8 of the sprouts, 1/8 of the veggie mixture, and 1/8 of the bean thread noodles.

4. Roll from the bottom up, folding in the sides as you roll.

5. Repeat until all 8 rolls are assembled. Place on a serving dish either whole or sliced in half, alongside the PB dipping sauce.

Handsome Carver’s Chipotle Peanut Butter Rice Cakes

By | Chipotle Peanut Butter, Recipes | No Comments

Vegetable broth, approximately 32 oz
Olive oil
1 leek, chopped
2 tbsp of Handsome Carver’s Chipotle Peanut Butter (if peanut butter has separated use the oil for a great flavor-adding ingredient)
1 ½ cups risotto rice (or substitute brown rice)
5 tbsp grated Parmigiano Reggiano cheese
¾ cup butter

Optional: 1 tsp saffron

Makes 12 rice cakes

Pre-heat oven to 365°F.

Heat up the vegetable broth in a sauce pan and set aside. In a large fry pan heat olive oil and then add the chopped leek. Cook until leek is brown; remove from pan and set aside.

In the same large fry pan, add some oil from the Handsome Carver’s Chipotle Peanut Butter jar (or olive oil if the oil has not separated) and toast the risotto. Add enough warm broth until the risotto is completely immersed in it. Cook with high heat stirring frequently. Continue adding broth as it becomes absorbed in the risotto until risotto is done. At about halfway through the risotto cooking time, add the saffron (optional). Make sure it doesn’t dry up; if needed, add more warm broth. When risotto is done add and combine the chopped leek and salt to taste.

Turn heat off and add the parmesan cheese, butter and Handsome Carver’s Chipotle Peanut Butter. Stir until well combined and creamy.

Place baking paper on a tray with tall edges, then pour the risotto until about 1 inch tall.  Let it cool down. Use a food ring mold to shape mixture into 12 discs of 3″/3,5″ diameter.

In a lightly butter a fry pan, lightly brown the discs on both sides. Place the discs on a baking tray with baking paper previously unrolled to cover its surface, sprinkle them with grated Parmigiano Reggiano and bake for 15 min, or until the cheese melts.

Serve warm.

Handsome Carver’s Chipotle Peanut Butter Soup

By | Chipotle Peanut Butter, Recipes | No Comments

48 oz chicken broth
1 can coconut milk (12 to 14 oz)
3 strips bacon and grease
1 green pepper
1 large carrot
1/2 large potato
1/2 onion
1 jar Handsome Carver’s Chipotle Peanut Butter
2 cups rice

Salt and pepper
Chopped peanuts

Dice the onion, pepper and carrot, and cut the potato into bite size pieces.

Bring the chicken broth to a boil and add the potato. Wait 5 minutes, then add the carrots. Wait another 5 minutes then add the onion and pepper.

While the vegetables are cooking, pan fry the bacon. Cut the bacon into bite size pieces and add it (along with all of the grease) after the onion and pepper have been in for 5 minutes.

Add the coconut milk. Turn to a low-medium heat and add the chipotle peanut butter and stir until incorporated. Let simmer for 20 minutes.

While the soup is simmering, cook the 2 cups of rice.

Turn the soup to a low heat and add the cream. Do not let it boil once the cream is in, but cook on a low heat for another 10 minutes. If desired, add salt and/or pepper.

Add a scoop of rice to each bowl, take the soup off the heat and pour it over the top of the rice. If desired, serve with chives and chopped peanuts on the side, or in the bowl once it’s been served.
