Handsome Carver's Chipotle Peanut Butter Saffron Rice Cakes

Handsome Carver’s Chipotle Peanut Butter Rice Cakes

INGREDIENTS

Vegetable broth, approximately 32 oz
Olive oil
1 leek, chopped
2 tbsp of Handsome Carver’s Chipotle Peanut Butter (if peanut butter has separated use the oil for a great flavor-adding ingredient)
1 ½ cups risotto rice (or substitute brown rice)
5 tbsp grated Parmigiano Reggiano cheese
¾ cup butter
Salt

Optional: 1 tsp saffron

Makes 12 rice cakes

DIRECTIONS

Pre-heat oven to 365°F.

Heat up the vegetable broth in a sauce pan and set aside. In a large fry pan heat olive oil and then add the chopped leek. Cook until leek is brown; remove from pan and set aside.

In the same large fry pan, add some oil from the Handsome Carver’s Chipotle Peanut Butter jar (or olive oil if the oil has not separated) and toast the risotto. Add enough warm broth until the risotto is completely immersed in it. Cook with high heat stirring frequently. Continue adding broth as it becomes absorbed in the risotto until risotto is done. At about halfway through the risotto cooking time, add the saffron (optional). Make sure it doesn’t dry up; if needed, add more warm broth. When risotto is done add and combine the chopped leek and salt to taste.

Turn heat off and add the parmesan cheese, butter and Handsome Carver’s Chipotle Peanut Butter. Stir until well combined and creamy.

Place baking paper on a tray with tall edges, then pour the risotto until about 1 inch tall.  Let it cool down. Use a food ring mold to shape mixture into 12 discs of 3″/3,5″ diameter.

In a lightly butter a fry pan, lightly brown the discs on both sides. Place the discs on a baking tray with baking paper previously unrolled to cover its surface, sprinkle them with grated Parmigiano Reggiano and bake for 15 min, or until the cheese melts.

Serve warm.

Handsome Carver’s Coconut Cashew Butter Meringue Pie

CRUST

1 stick + 6 tablespoons butter, room temperature
2/3 cup granulated sugar
1/3 cup + 1 tablespoon powdered sugar
Pinch of salt
1 egg + 1 egg yolk
Zest of 1 orange (optional)
2 ¾ cups all-purpose flour
Milk

In a bowl, stir butter, granulated sugar, powdered sugar, and salt together until blended.  Add egg and orange zest (optional) and mix until smooth.  Add flour a cup at a time, then add milk, if needed, by teaspoons for a consistency of pie dough.

Form the dough in a ball, wrap in plastic wrap and refrigerate for 1 hour.  Then place dough in the center of either a spring form pan or pie tin.  Using your fingers spread the dough out to cover the bottom and up the wall of the pan or tin (about 1”).  Set aside the prepared pan.

FILLING

1 cup dark chocolate chips
½ c
up granulated sugar
½ Jar Handsome Carver’s Coconut Cashew Butter
4 egg whites
Pinch of salt

Preheat oven to 300°F.

In a bowl, coarsely mix together chocolate chips, sugar and Handsome Carver’s Coconut Cashew Butter.  In a separate larger bowl, beat the egg whites and pinch of salt until stiff.  Gently fold the first mixture into the eggs being careful not to undo the foam.

Pour the mixture into the prepared pan.  Bake for at least 40 minutes, checking during baking until the dough and filling are a golden brown.  Cool gradually to room temperature by leaving the pie in the oven with the door cracked, then remove from oven.

1 1/4 cup yam, cooked and mashed

DIRECTIONS

  1. Position a rack in the center of the oven. Pre-heat the oven to 400°F.
  2. Line a standard 12-muffin pan with cupcake paper liners.
  3. In a medium bowl mix the dry ingredients together. Set aside.
  4. Whisk together the eggs, milk, canola oil and vanilla in a large bowl.
  5. Add the mixed dry ingredients to the liquid mixture and incorporate gently.
  6. Fold in the mashed yam and combine; don’t over-mix the batter or the muffins will be tough.
  7. Stir in chopped nuts and/or raisins (optional).
  8. Spoon batter into the cupcake papers to about ½ full. Spoon 1 rounded teaspoon of Handsome Carver’s Pumpkin Pie Peanut Spread into the center of each cup then top with more batter until batter is at the rim of the cup. With the tip of a knife gently swirl the batter to incorporate the Pumpkin Pie Peanut Spread.
  9. Bake the muffins for 15 minutes or until a toothpick inserted into the middle comes out clean. Serve the muffins warm.

1 ½ cups graham cracker crumbs
6 tablespoons unsalted butter
1 tablespoon sugar

FILLING

1 cup heavy cream
8 ounces cream cheese, room temperature
2 jars Handsome Carver’s Pumpkin Pie Peanut Spread
1 tablespoon sugar
2 tablespoons vanilla

Optional Toppings: chopped nuts and whipped cream

DIRECTIONS 

Preheat oven to 350°F.

In a bowl, stir together the graham cracker crumbs and melted butter; press into the bottom and sides of a 9-inch pie dish. Bake until brown, about 5 minutes. Set aside to cool completely.

In a large bowl beat the cream at high speed until stiff peaks form.

In a separate bowl add the cream cheese, peanut butter, sugar and vanilla and beat until the mixture is smooth.

Gently fold the cream cheese – peanut butter mixture into the whipped cream until completely blended.

Spoon the mixture into the cooled pie shell and smooth out the top.

CHICKEN SKEWERS

INGREDIENTS

1 chicken breast, cut into strips
2 tbsp soy sauce
1 tbsp olive oil
2 cloves garlic, minced
pinch of sugar
salt/pepper
skewers

DIRECTIONS

Combine marinade ingredients and chicken. Marinade for at least 10 minutes, ideally about 1 hour. Thread chicken onto skewers. You can grill the skewers, or just cook them in a frying pan. Cook for 3-5 min on each side.

CHIPOTLE PEANUT SAUCE

INGREDIENTS

1/4 cup Handsome Carver’s Chipotle Peanut Butter
1/4 cup warm water
1 tbsp soy sauce
1/2 tsp white sugar
1 clove garlic, minced

DIRECTIONS

Stir together peanut butter, soy sauce, sugar and garlic until well mixed. Gradually stir in water until texture is smooth.

INGREDIENTS

1 head cauliflower – cut into florets
½ cup Handsome Carver’s Almond Butter
2 tbsp olive oil
3 tsp Tandoori Seasoning (or see seasoning mix below*)

Squeeze of fresh lemon juice or lime juice
Fresh cilantro leaves or flat-leaf parsley – coarsely chopped for garnish
Crushed toasted almonds (optional)

Serves 4-5 as a side dish.

DIRECTIONS

Preheat oven on a low broil setting. Adjust the oven rack to 4-5 inches away from the heat.

In a large bowl mix together the almond butter, oil and seasoning mix. Gently toss the florets into the mixture and coat well.

Spread out the cauliflower in a single layer on a foil lined baking pan or non-stick pan.

Roast under the broiler for 10-12 minutes, until just tender and golden brown (remove from oven halfway to gently flip florets over). When cooked, arrange florets on a serving dish, squeeze juice of fresh lemon or lime lightly over the florets, and garnish with fresh cilantro or parsley. For extra crunch, and to add texture for presentation, top with crushed toasted almonds.

Serve hot.

INGREDIENTS

1 tsp ground ginger
1 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
1 tsp turmeric
1 tsp salt
¼ to 1 tsp cayenne pepper to taste

INGREDIENTS

3 tablespoons butter or margarine
1 package (10 oz., about 40) marshmallows
1 cup Handsome Carver’s Coconut Cashew Butter
6 cups Rice Krispies cereal

DIRECTIONS

In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. Stir in cashew butter until melted.

Add Rice Krispies cereal. Stir until well coated.

No Bake Handsome Carver Pumpkin Pie Peanut Spread Oatmeal Cookies

INGREDIENTS

2 2/3 cups uncooked “quick 1-minute” oats (not old-fashioned or instant oatmeal)
1 stick butter
½ cup granulated sugar
½ cup milk (2 percent or whole milk)
½ cup Handsome Carver’s Pumpkin Pie Peanut Spread
Pinch of salt
1 teaspoon vanilla extract
Chopped walnuts, golden raisins and dried cranberries to taste

DIRECTIONS

Place 2 sheets of wax paper about 18 inches long on the counter. Measure out oats and set aside.

Cut butter into 4 pieces and place in a 2 ½ to 3 quart saucepan over medium heat. When butter starts to melt, add sugar, milk and salt. Raise heat to medium high. Stir until mixture just comes to a boil, about 2 to 3 minutes.

Set a timer for 2 minutes. Keeping the mixture at a moderate boil, cook and stir exactly 2 minutes.

Remove saucepan from heat and immediately stir in Handsome Carver’s Pumpkin Pie Peanut Spread until melted and incorporated then stir in vanilla and oats until thoroughly incorporated.

Per preference add to mixture chopped walnuts, golden raisins and dried cranberries.

Drop the cookie mixture onto the wax paper. Use about 2 tablespoons of mixture for each cookie. Let stand at room temperature until firm, about 30 minutes or longer.
