Handsome Carver’s Pumpkin Pie Peanut Spread Holiday Muffins

INGREDIENTS

2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon grated nutmeg
1 teaspoon ground cinnamon
2/3 cup brown sugar
2 large eggs
1 cup milk
1/4 cup canola oil
1 teaspoon vanilla
1 1/4 cup yam, cooked and mashed

Optional: chopped nuts and/or raisins

DIRECTIONS

  1. Position a rack in the center of the oven. Pre-heat the oven to 400°F.
  2. Line a standard 12-muffin pan with cupcake paper liners.
  3. In a medium bowl mix the dry ingredients together. Set aside.
  4. Whisk together the eggs, milk, canola oil and vanilla in a large bowl.
  5. Add the mixed dry ingredients to the liquid mixture and incorporate gently.
  6. Fold in the mashed yam and combine; don’t over-mix the batter or the muffins will be tough.
  7. Stir in chopped nuts and/or raisins (optional).
  8. Spoon batter into the cupcake papers to about ½ full. Spoon 1 rounded teaspoon of Handsome Carver’s Pumpkin Pie Peanut Spread into the center of each cup then top with more batter until batter is at the rim of the cup. With the tip of a knife gently swirl the batter to incorporate the Pumpkin Pie Peanut Spread.
  9. Bake the muffins for 15 minutes or until a toothpick inserted into the middle comes out clean. Serve the muffins warm.

INGREDIENTS

CRUST

1 ½ cups graham cracker crumbs
6 tablespoons unsalted butter
1 tablespoon sugar

FILLING

1 cup heavy cream
8 ounces cream cheese, room temperature
2 jars Handsome Carver’s Pumpkin Pie Peanut Spread
1 tablespoon sugar
2 tablespoons vanilla

Optional Toppings: chopped nuts and whipped cream

DIRECTIONS 

Preheat oven to 350°F.

In a bowl, stir together the graham cracker crumbs and melted butter; press into the bottom and sides of a 9-inch pie dish. Bake until brown, about 5 minutes. Set aside to cool completely.

In a large bowl beat the cream at high speed until stiff peaks form.

In a separate bowl add the cream cheese, peanut butter, sugar and vanilla and beat until the mixture is smooth.

Gently fold the cream cheese – peanut butter mixture into the whipped cream until completely blended.

Spoon the mixture into the cooled pie shell and smooth out the top.

Place the pie in the freezer for 1 hour to set. If pie will not be served for a while, wrap it in plastic wrap after 1 hour in the freezer. Handsome Carver's Pumpkin Pie Peanut Spread Organic

Pumpkin Pie No Bake Oatmeal Cookies

No Bake Handsome Carver Pumpkin Pie Peanut Spread Oatmeal Cookies

INGREDIENTS

2 2/3 cups uncooked “quick 1-minute” oats (not old-fashioned or instant oatmeal)
1 stick butter
½ cup granulated sugar
½ cup milk (2 percent or whole milk)
½ cup Handsome Carver’s Pumpkin Pie Peanut Spread
Pinch of salt
1 teaspoon vanilla extract
Chopped walnuts, golden raisins and dried cranberries to taste

DIRECTIONS

Place 2 sheets of wax paper about 18 inches long on the counter. Measure out oats and set aside.

Cut butter into 4 pieces and place in a 2 ½ to 3 quart saucepan over medium heat. When butter starts to melt, add sugar, milk and salt. Raise heat to medium high. Stir until mixture just comes to a boil, about 2 to 3 minutes.

Set a timer for 2 minutes. Keeping the mixture at a moderate boil, cook and stir exactly 2 minutes.

Remove saucepan from heat and immediately stir in Handsome Carver’s Pumpkin Pie Peanut Spread until melted and incorporated then stir in vanilla and oats until thoroughly incorporated.

Per preference add to mixture chopped walnuts, golden raisins and dried cranberries.

Drop the cookie mixture onto the wax paper. Use about 2 tablespoons of mixture for each cookie. Let stand at room temperature until firm, about 30 minutes or longer.
