Handsome Carver’s Cinnamon & Honey Peanut Spread Ricotta Pie

CRUST

1 stick + 6 tablespoons butter, room temperature
2/3 cup granulated sugar
1/3 cup + 1 tablespoon powdered sugar
Pinch of salt
1 egg + 1 egg yolk
Zest of 1 orange (optional)
2 ¾ cups all-purpose flour
Milk

In a bowl, stir butter, granulated sugar, powdered sugar, and salt together until blended.  Add egg and orange zest (optional) and mix until smooth.  Add flour a cup at a time, then add milk, if needed, by teaspoons for a consistency of pie dough.

Form the dough in a ball, wrap in plastic wrap and refrigerate for at least half hour.  Then place dough in the center of either a spring form pan or pie tin.  Spread the dough out to cover the bottom and up the wall of the pan or tin (about 1”).  Punch holes in dough to avoid unwanted rising and cracking while in the oven.

Set aside the prepared pan.

FILLING

15 oz ricotta cheese
½ cup sugar
1 full egg and 2 egg yolks
1 cup chopped dark chocolate or chocolate chips
⅓ jar Handsome Carver’s Cinnamon & Honey Peanut Spread
½ tsp salt

In a separate bowl mix ricotta, sugar, eggs, Handsome Carver’s Cinnamon & Honey Peanut Spread and salt. When smooth, add the chocolate and mix all together.

Preheat the oven at 350°F.

Pour entire filling mixture onto dough, and use the rest of the dough to decorate the top as you like. Bake for ∿45min (until the dough has browned).

INGREDIENTS

1 cup sugar
3 eggs
2 cups bread crumbs
2 tsp baking powder
½ tsp salt
4 oz dark chocolate
1 ¼ cups heavy whipping cream
¾ jar Handsome Carver’s Vanilla Almond Butter

DIRECTIONS

Mix sugar, salt and eggs until smooth. Add bread crumbs and baking powder, previously mixed together. Pour in Handsome Carver’s Vanilla Almond Butter and the cream. Mix until homogeneous.

Preheat the oven at 365°F.

Chop the chocolate in chunks of fair size, then add to mixture.

Pour into preferred cake mold and bake for 40-50 min, depending on desired level of moisture and softness.

INGREDIENTS

1 ¼ cups chocolate
½ stick butter
½ jar of Handsome Carver’s Coconut Peanut Spread
1 cup sugar
¾ cup all-purpose flour
4 eggs
½ tsp salt

Makes 11-12 lava cupcakes.

DIRECTIONS

Melt the chocolate with the butter, stir until smooth and let cool.

Pre-heat the oven to 365°F.

Mix all other ingredients together, then add chocolate mixture. Pour mixture into cupcake liners. Bake for 15 minutes.

Serve warm.

Preheat oven to 300°F.

In a bowl, coarsely mix together chocolate chips, sugar and Handsome Carver’s Coconut Cashew Butter.  In a separate larger bowl, beat the egg whites and pinch of salt until stiff.  Gently fold the first mixture into the eggs being careful not to undo the foam.

Pour the mixture into the prepared pan.  Bake for at least 40 minutes, checking during baking until the dough and filling are a golden brown.  Cool gradually to room temperature by leaving the pie in the oven with the door cracked, then remove from oven.

INGREDIENTS

2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon grated nutmeg
1 teaspoon ground cinnamon
2/3 cup brown sugar
2 large eggs
1 cup milk
1/4 cup canola oil
1 teaspoon vanilla
1 1/4 cup sweet potatoes, cooked and mashed
1 jar Handsome Carver’s Vanilla Almond Butter

Optional: chopped nuts and/or raisins

DIRECTIONS

 Position a rack in the center of the oven. Pre-heat the oven to 400°F. Line a standard 12-muffin pan with cupcake paper liners.

In a medium bowl mix the dry ingredients together. Set aside.

Whisk together the eggs, milk, canola oil and vanilla in a large bowl.

Add the mixed dry ingredients to the liquid mixture and incorporate gently.

Fold in the mashed sweet potatoes and combine; don’t overmix the batter or the muffins will be tough.

Stir in chopped nuts and/or raisins (optional).

Spoon batter into the cupcake papers to about ½ full. Spoon 1 rounded teaspoon of Handsome Carver’s Vanilla Almond Butter into the center of each cup then top with more batter until batter is at the rim of the cup. With the tip of a knife gently swirl the batter to incorporate the Vanilla Almond Butter.

Bake the muffins for 15 minutes or until a toothpick inserted into the middle comes out clean. Serve the muffins warms.

Pumpkin Pie No Bake Oatmeal Cookies

INGREDIENTS

2 2/3 cups uncooked “quick 1-minute” oats (not old-fashioned or instant oatmeal)
1 stick butter
½ cup granulated sugar
½ cup milk (2 percent or whole milk)
½ cup Handsome Carver’s Pumpkin Pie Peanut Spread
Pinch of salt
1 teaspoon vanilla extract
Chopped walnuts, golden raisins and dried cranberries to taste

DIRECTIONS

Place 2 sheets of wax paper about 18 inches long on the counter. Measure out oats and set aside.

Cut butter into 4 pieces and place in a 2 ½ to 3 quart saucepan over medium heat. When butter starts to melt, add sugar, milk and salt. Raise heat to medium high. Stir until mixture just comes to a boil, about 2 to 3 minutes.

Set a timer for 2 minutes. Keeping the mixture at a moderate boil, cook and stir exactly 2 minutes.

Remove saucepan from heat and immediately stir in Handsome Carver’s Pumpkin Pie Peanut Spread until melted and incorporated then stir in vanilla and oats until thoroughly incorporated.

Per preference add to mixture chopped walnuts, golden raisins and dried cranberries.

Drop the cookie mixture onto the wax paper. Use about 2 tablespoons of mixture for each cookie. Let stand at room temperature until firm, about 30 minutes or longer.

CRUST

  • 16 Graham Crackers 
  • 2/3 stick butter, room temperature
  • 1/3 cup Handsome Carver’s Cashew Butter

Crumble the Graham Crackers finely, then mix well with butter and Cashew Butter. Distribute at the bottom of a spring pan, and 1/2 inch up the walls. Press until compact, then put in the freezer  for a half hour.

CAKE

  • 3 cups cream cheese
  • 2 eggs plus 1 egg-yolk
  • 1/2 cup sour cream 
  • 2 tbsp flour or cornstarch
  • 1/2 cup granulated sugar
  • juice and zest of 1 lemon
  • 1 tsp vanilla extract
  • 2 pinches salt

Preheat oven to 350°.

Mix together eggs, vanilla extract and sugar. In a separate bowl, blend the cream cheese until creamy with no clumps, then add it to the mix. Add lemon juice and zest, flour, salt and sour cream.

Take the spring pan out of the freezer, and pour the cake mix onto the crust.

Prepare the spring pan for a water bath, or use whatever preferred method to ensure a moist environment in the oven. Put the cake in the oven for 30 minutes, then lower the temperature to 320° and keep baking for 30-40 minutes more.

At baking completion, turn oven off and leave the cake in the oven for 30 minutes with the oven door cracked slightly.  Remove from oven once cake is room temperature.

BLACKBERRY TOPPING

  • 1 1/4 cups blackberries
  • 2 tbsp granulated sugar
  • 1 tbsp flour or cornstarch

Handsome Carver's Cashew Butter Crust Lemon and Blackberry CheesecakePour all ingredients in a pot.  At low heat stir ingredients often to prevent sticking to the bottom.  Continue stirring on low heat until the mixture turns into a chunky jam.

Once the cheesecake is at room temperature, spread the blackberry topping, then refrigerate for at least 4 hours before serving .  More time in the refrigerator will lead to a better consistency.

juice of 1 lemon
ground flax seeds

Blend kale, orange juice and yogurt until smooth.
Next add the remaining fruits and the lemon juice blend again.
