Cinnamon & Honey Cashew Butter Cookies


4 tablespoons (1/2 stick) unsalted butter
3/4 cup Handsome Carver’s Cinnamon & Honey Cashew Butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
1 cup all-purpose flour
3/4 teaspoon baking soda


Cream butter, cinnamon & honey cashew butter, granulated and brown sugar together until light and fluffy. Add egg and mix until well combined.

Separately, sift flour and baking soda together. Add to the butter mixture, and beat until combined.

Prepare a few baking sheets with parchment paper.

Scoop out about 2 tablespoons of dough, shape into a ball, and place on one of the baking sheets. Repeat with remaining dough, making sure that scoops are roughly 3’ apart. Press the dough balls with the back of a wet fork to flatten them slightly.

Transfer to the oven, and bake at 350 degrees for 18 to 20 minutes until golden brown. Rotate the baking sheets between the oven shelves halfway through baking if necessary.

Transfer each cookie to a wire rack to cool. Serve or store at room temperature. Will last up to 1 week.
